So, we all love pizza probably, right? Some of our favorite family moments are pizza nights. We'll make a big batch of dough, get everyone's favorite toppings and then watch a movie or a hockey game or sometimes just sit and talk. I always look forward to pizza night. Pizza dough is so easy to make at home. If you're intimidated by baking with yeast, try this easy Thai Chicken Pizza recipe using Fleischmann’s® RapidRise® Yeast. The rise time is only ten minutes for rapid rise yeast. Sounds good right?

Skip calling out for pizza and make this Thai Chicken Pizza on your next pizza night. Homemade pizza is so much better than your local takeout. And you can customize the toppings to suit your family - then everyone is happy. Baking with yeast at home is so rewarding! The taste is better and you can be confident in the quality. How to Make Thai Chicken Pizza with a Peanut Sauce

So, as I said above we're going to use Fleischmann’s® RapidRise® Yeast. This is a specific type of yeast and you want to make sure you get the Fleischmann’s® RapidRise®​Yeast​package. There is also bread machine yeast and active dry yeast out there, so read the packaging.

With rapid rise yeast, we don't have to worry about long rise times and proofing the yeast (a process where you add the yeast to water and let it foam or "proof", like in my pizza dough from this Homemade Pizza Dough Recipe and my Quick + Light Brioche Buns Recipe.)

So to start we're going to need a medium or large mixing bowl. Combine one envelope of yeast with one cup of flour, the salt, and the sugar (Photo 1). Now mix together very warm water and the oil. The water should be lukewarm but NOT hot! Use a thermometer for best results. The ideal temperature is between 120˚F and 130˚F. It should feel very warm to the touch. Water that is not warm enough won't activate the yeast and water that is too hot can kill the yeast so use care regarding the temperature.

Now mix all of those ingredients together and then add the rest of the flour, a little bit at a time, and only as you need it. Lightly flour your countertop and knead the dough. To do this, you push the dough away from you and into the counter with the heels of your hands. Turn it a quarter turn and then push it away again. Repeat for 3-4 minutes. You should end up with a nice soft ball of dough that is only slightly sticky. (Photo 2)

Now set the dough back in the bowl and let it rise for 10 minutes. (Photo 3) This is a good time to preheat the oven to 425°F, make the peanut sauce and start cooking the chicken.

How to Make a Peanut Sauce

Combine all ingredients into a bowl and whisk it together. A whisk is important to get the peanut butter to blend properly.

How to Cook Peanut Chicken

Slice the chicken breast and cook in a non-stick frying pan over medium heat for about 2 minutes per side or until fully cooked. Add 3 tablespoons of the sauce and 2 tablespoons of water and then mix together. Remove from heat and set aside.

Slice the red onion and bell pepper and tear some cilantro leaves off their stems. Set aside. (You will have some of these ingredients and some peanut sauce leftover for another use)

Grate the mozzarella and set aside.

How to Make the Thai Chicken Pizza

Once your dough has risen, spray a pizza pan with oil and then flatten the dough on top of it. Use your hands to press and stretch the pizza to the edges of the pan (Photo 1). (Optionally, you can use a rolling pin and roll out a 12-inch crust and then place that on your cookie sheet.)

Spread most of the sauce onto the pizza dough using the back of a large spoon (Photo 2). Add the chicken (Photo 3) and then the cheese (Photo 4). Add the red onion (Photo 5) and the red bell pepper (Photo 6).

Bake for 12-15 minutes until the cheese is bubbly and the crust is lightly browned. Slice the pizza and then garnish with cilantro leaves. enjoy!

Questions About Making Pizza with Fleischmann’s® RapidRise™ Yeast

My dough didn't rise. Why not?

There are a couple of possible reasons for this - incorrect water temperature, improper mix method, and expired yeast. Water that is not warm enough might not activate the yeast and water that is too hot can kill the yeast. Also, expired yeast will not rise. Make sure to follow the directions when using this yeast or it will not rise. I tested this by just mixing everything together at once and it did not rise. Why do you call this a Thai Chicken Pizza?

I call this a Thai Chicken pizza because it starts with a Thai style peanut sauce. Then I add chicken, red onion, red bell pepper and cilantro, ingredients that I use a lot in Thai cooking. It's inspired by those dishes and is by no means authentic. It's pizza.

Ingredients

For the Pizza Crust

For the Peanut Sauce

  • ½ cup natural peanut butter
  • ¼ cup soy sauce
  • ¼ cup cold water
  • 1 tablespoon rice vinegar
  • 1 tablespoon granulated white sugar
  • 2 teaspoons chili garlic sauce ((Sambal Oelek))
  • 1 teaspoon lime juice

For the Toppings

  • 1 chicken breast (sliced)
  • ½ red bell pepper (sliced)
  • ¼ red onion (sliced)
  • 1 to 2 cups shredded mozzarella cheese (4 to 8 ounces or 125 to 250g)
  • small bunch cilantro leaves (for garnish)

Instructions

For the Pizza Crust

  • In a medium bowl, mix together one cup of the flour with the yeast, salt, and sugar.

  • Mix together the warm water and the oil and add to the bowl of the flour mixture. Mix together.

  • Add the rest of the flour, a little at a time, only as you need it until you have a soft dough.

  • Turn the dough out onto a lightly floured counter and knead the dough by pushing it with the heels of your hands and turning it for about 3-4 minutes, or until you have a soft dough that is slightly sticky. Let sit for 10 minutes.

For the Peanut Sauce

  • Add all ingredients to a small bowl and whisk together until combined.

For the Peanut Chicken

  • Cook the chicken in a non-stick pan, over medium heat for about 2 minutes per side, or until fully cooked. Add 3 tablespoons of the peanut sauce and 2 tablespoons water. Stir together until fully combined. Remove from heat.

To cook the Pizza

  • Preheat oven to 425°F (220℃). Press the dough out onto a greased pizza pan. Or use a rolling pin to roll a 12-inch disc and place that on a greased cookie sheet.

  • Spread most of the sauce onto the pizza dough using the back of a large spoon.

  • Add the chicken and then the mozzarella cheese.

  • Add the red onions and the bell pepper.

  • Bake for 12-15 minutes or until cheese is bubbly and crust is light golden brown. Slice and garnish with the cilantro leaves.

Notes

  1. Water should be 120° to 130°F. Water that is not warm enough will not activate yeast, and water that is too warm will kill yeast. The water should feel very warm to touch. Use a thermometer for best results.
  2. Make sure yeast is fresh, expired yeast will not rise.

Makes a 12-inch pizza.
